Ingredients
1 lb lean ground beef
1 small onion, diced
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
8 flour or corn tortillas
2 cups enchilada sauce (store-bought or homemade)
2 cups shredded cheddar or Monterey Jack cheese
Sour cream (for serving)
Instructions

Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.

In a skillet, cook ground beef and onion over medium heat until browned and soft, about 5–7 minutes.

Add garlic, cumin, and chili powder. Cook 1 more minute.

Spoon beef mixture into tortillas, roll, and place seam-side down in the baking dish.

Pour enchilada sauce over the top and sprinkle with cheese.

Bake for 20–25 minutes until bubbly and golden.
