Ingredients

Ground Beef:

  • 1 lb ground beef

Potatoes:

  • 4 medium potatoes (peeled and diced)

Seasonings:

  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin (optional)
  • Salt and pepper to taste

  • 1 cup beef broth (or water)
  • 2 tablespoons olive oil (or butter)

Instructions

  1. Cook the potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 10-12 minutes until golden and tender. Remove and set aside.
  2. Cook the beef: In the same skillet, add the remaining tablespoon of olive oil. Add the ground beef, cooking and breaking it up until browned, about 6-8 minutes.
  3. Sauté the vegetables: Add the diced onion and garlic, cooking for an additional 2-3 minutes until the onions are soft and translucent.
  4. Add seasonings: Stir in oregano, paprika, cumin (if using), salt, and pepper. Cook for 1 minute to release the fragrance of the spices.
  5. Combine the potatoes: Return the cooked potatoes to the skillet. Add the beef broth (or water) and stir well. Simmer for 5-7 minutes, allowing the flavors to meld.
  6. Serve: Adjust seasoning with salt and pepper as needed. Garnish with fresh parsley or cilantro. Serve hot as a standalone meal or with a side salad.
