Ingredients

Swordfish

  • 4 swordfish steaks (68 oz each)
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder

Mango Salsa

  • 2 ripe mangos, diced
  • ½ red onion, finely diced
  • 1 small red bell pepper, diced
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp fresh lime juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ½ jalapeño, finely diced


Instructions

  1. Preheat Grill: Preheat your grill to medium-high heat, approximately 400°F, ensuring it is hot enough to sear the swordfish properly.
  2. Prepare Swordfish: Brush the swordfish steaks on both sides with olive oil. Season evenly with salt, black pepper, paprika, and garlic powder.
  3. Oil Grill Grates: Lightly oil the grill grates to prevent sticking and ensure nice grill marks on the fish.
  4. Grill Swordfish: Place the swordfish steaks on the grill. Cook for 4 to 5 minutes per side, grilling until the fish is opaque and flakes easily with a fork.
  5. Rest Fish: Remove the swordfish from the grill and let them rest for 2 minutes to allow the juices to redistribute.
  6. Make Mango Salsa: In a bowl, combine diced mango, red onion, red bell pepper, chopped cilantro, lime juice, salt, black pepper, and jalapeño if desired. Mix well.
