Description

This Grilled New York Strip with Blue Cheese Butter recipe delivers a bold and flavorful steakhouse experience at home. Juicy and perfectly grilled New York strip steaks are complemented by a rich, tangy blue cheese butter that melts deliciously over the hot steaks, making it ideal for special occasions or summer barbecues.

Ingredients

New York Strip Steaks

  • 2 New York strip steaks (1214 oz each)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste

Blue Cheese Butter

  • 4 tablespoons unsalted butter, softened
  • ¼ cup crumbled blue cheese
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh chives, chopped
  • ½ teaspoon garlic powder
  • Pinch of black pepper

Instructions

  1. Prepare the Steaks: Remove steaks from the refrigerator 30 minutes before grilling to allow them to come to room temperature. Pat them dry with paper towels, then rub both sides evenly with olive oil, and season generously with salt and freshly ground black pepper.
  2. Preheat the Grill: Preheat your grill to high heat, around 450–500°F, and clean the grates thoroughly to prevent sticking.
  3. Grill the Steaks: Place the steaks on the hot grill and cook for 4–5 minutes on each side, depending on thickness, aiming for medium-rare doneness. Use an instant-read thermometer to check for an internal temperature of 130–135°F.
  4. Rest the Steaks: Transfer the grilled steaks to a plate and let them rest for 5 to 10 minutes. This resting period allows the juices to redistribute, ensuring a juicy steak.
  5. Make the Blue Cheese Butter: While the steaks rest, combine the softened unsalted butter, crumbled blue cheese, finely chopped parsley, chopped chives, garlic powder, and a pinch of black pepper in a small bowl. Mix well until all ingredients are incorporated.
  6. Serve: Place a generous dollop of the prepared blue cheese butter on each hot steak just before serving so it melts slightly and enhances the flavor.

Notes

  • Use a meat thermometer to ensure your steak reaches your preferred doneness: Rare (125°F), Medium-Rare (130–135°F), Medium (140°F).
  • For best flavor, choose a high-quality blue cheese.
  • The blue cheese butter can be prepared up to 3 days in advance and refrigerated, then softened before serving.
  • This recipe works equally well with ribeye or filet mignon steaks if preferred.
