Description

Ingredients

1.5 lbs Sirloin steak, cut into 1-inch cubes

1.5 lbs Yukon Gold potatoes, quartered

6 cloves Fresh garlic, minced

4 tablespoons Butter (unsalted)

3 tablespoons Olive oil (extra virgin)

2 teaspoons Fresh thyme (or 1 teaspoon dried)

Salt (to taste)

1 teaspoon Black pepper, freshly ground

2 tablespoons Fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the Potatoes: Boil quartered potatoes in salted water for 12-15 minutes until fork-tender but not falling apart. Drain and let cool for 5 minutes. Smash each potato gently with a fork.

  2. Cook the Steak Bites: Pat steak dry, season with salt and pepper. Heat 2 tablespoons olive oil in a skillet over high heat. Cook steak bites in a single layer for 2-3 minutes per side until golden-brown and medium-rare. Remove from skillet.

  3. Crisp the Potatoes: Add remaining olive oil to the same skillet. Place smashed potatoes cut-side down and cook for 4-5 minutes until crispy. Flip and cook for another 3-4 minutes.

  4. Make the Garlic Butter Sauce: Lower heat to medium-low. Add butter and garlic, cooking for 1 minute until fragrant. Stir in thyme, then return steak bites to the skillet, tossing everything for 1-2 minutes until heated through.

Notes

  • For a spicy version, add 1/2 teaspoon of red pepper flakes to the garlic butter.
  • To make the dish more herbaceous, add parsley, chives, and thyme to the garlic butter.
