1.5 lbs Sirloin steak, cut into 1-inch cubes
1.5 lbs Yukon Gold potatoes, quartered

2 teaspoons Fresh thyme (or 1 teaspoon dried)

1 teaspoon Black pepper, freshly ground

Prepare the Potatoes: Boil quartered potatoes in salted water for 12-15 minutes until fork-tender but not falling apart. Drain and let cool for 5 minutes. Smash each potato gently with a fork.

Cook the Steak Bites: Pat steak dry, season with salt and pepper. Heat 2 tablespoons olive oil in a skillet over high heat. Cook steak bites in a single layer for 2-3 minutes per side until golden-brown and medium-rare. Remove from skillet.

Crisp the Potatoes: Add remaining olive oil to the same skillet. Place smashed potatoes cut-side down and cook for 4-5 minutes until crispy. Flip and cook for another 3-4 minutes.

Make the Garlic Butter Sauce: Lower heat to medium-low. Add butter and garlic, cooking for 1 minute until fragrant. Stir in thyme, then return steak bites to the skillet, tossing everything for 1-2 minutes until heated through.
