Ingredients

4 boneless, skinless chicken breasts

1.5 pounds baby potatoes, halved

1 cup chicken broth

1/2 cup grated Parmesan cheese

4 cloves garlic, minced

1 tablespoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Fresh parsley for garnish (optional)


Instructions

  1. Wash and halve potatoes; mince garlic.

  2. Rub chicken with olive oil and season with Italian seasoning, salt, pepper, and red pepper flakes.

  3. Layer potatoes in crockpot; place chicken on top.

  4. Pour chicken broth over everything.

  5. Sprinkle garlic and Parmesan on chicken.

  6. Cook on low 6-7 hours or high 3-4 hours until chicken reaches 165°F and potatoes are tender.

  7. Garnish with parsley and serve.
