Ingredients

For the Marinade:

½ cup ranch dressing (store-bought or homemade)

¼ cup grated parmesan cheese

2 tablespoons olive oil

3 garlic cloves, minced

1 teaspoon dried parsley (or fresh parsley, chopped)

½ teaspoon black pepper

½ teaspoon garlic powder

1 teaspoon lemon juice (optional)

For the Skewers:

1 ½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

Wooden or metal skewers (soaked if wooden)


Instructions

  1. Prepare the Marinade:
    In a bowl, mix ranch dressing, parmesan cheese, olive oil, garlic, parsley, pepper, garlic powder, and lemon juice. Stir well to combine.

  2. Marinate the Chicken:
    Place chicken cubes in a resealable bag or shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated. Seal and refrigerate for 30 minutes to 2 hours.

  3. Prepare the Skewers:
    Thread the marinated chicken onto skewers, leaving space between each piece. If using wooden skewers, soak them in water for 15 minutes to prevent burning.

  4. Grill the Chicken:
    Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C). The outside should be slightly charred.
