Description
Healthy and delicious garlic parmesan chicken meatloaf with tender ground chicken, Parmesan, garlic, and herbs. Baked mini loaves topped with optional melted mozzarella cheese.
Ingredients
1 pound ground chicken
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
1/4 cup finely chopped parsley
3 garlic cloves, minced
1 egg, beaten
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup milk
2 tablespoons olive oil
1/4 cup grated mozzarella cheese (optional)
Instructions

Preheat oven to 375°F (190°C).

In a large bowl, combine ground chicken, Parmesan, breadcrumbs, parsley, garlic, egg, oregano, salt, and pepper. Mix well.

Add milk and gently mix until evenly moist.

Divide mixture into 4 mini loaves and place on a greased baking sheet. Drizzle with olive oil.

Bake 25-30 minutes or until internal temp reaches 165°F (74°C).

Optional: Add mozzarella on top during last 5 minutes to melt.
Notes
- Mix in red pepper flakes for a spicy kick
- Substitute mozzarella with cheddar or provolone cheese
- Use gluten-free breadcrumbs to make it gluten-free friendly
