Description

These garlic butter steak lightning noodles are a quick and flavorful weeknight dinner, featuring tender steak strips tossed with slurp-worthy noodles in a rich garlic butter sauce. Ready in under 20 minutes, this dish combines savory soy and oyster sauces with a touch of heat for a satisfying Asian-inspired meal.

Ingredients

Steak

  • 1 lb sirloin or flank steak, thinly sliced
  • Salt and black pepper, to taste
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch

Noodles

  • 10 oz ramen noodles or egg noodles (discard seasoning packets)

Garlic Butter Sauce

  • 4 tablespoons butter
  • 6 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon chili garlic sauce (or more to taste)
  • ½ teaspoon crushed red pepper flakes (optional)
  • ½ cup reserved noodle water

Optional Garnish

  • Green onions, sliced
  • Sesame seeds

Instructions

  1. Cook the Noodles: Boil water and cook the ramen or egg noodles according to the package instructions. Reserve ½ cup of the cooking water before draining the noodles. Set the noodles aside.
  2. Prepare the Steak: In a bowl, toss the thinly sliced steak with salt, black pepper, soy sauce, and cornstarch until the strips are fully coated. This helps to tenderize and create a slight crust when searing.
  3. Sear the Steak: Heat a large skillet or wok over medium-high heat. Add 2 tablespoons of butter and let it melt. Add the coated steak strips and sear them for 2 to 3 minutes until browned on the outside but still tender inside. Remove the steak from the pan and set aside.
  4. Make the Garlic Butter Sauce: Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and sauté for about 20 to 30 seconds until fragrant, taking care not to burn the garlic.
  5. Add Sauces and Simmer: Stir in the low-sodium soy sauce, oyster sauce, brown sugar, chili garlic sauce, and crushed red pepper flakes if using. Pour in the reserved noodle water and let the mixture simmer for 1 to 2 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  6. Toss the Noodles: Add the cooked noodles directly into the skillet with the sauce. Toss well to coat the noodles evenly with the flavorful garlic butter sauce.
  7. Combine with Steak: Return the seared steak to the skillet. Toss everything together for another 1 to 2 minutes to ensure the steak is heated through and the noodles are well combined with the sauce.
  8. Garnish and Serve: Remove from heat. Garnish with sliced green onions and sesame seeds for added color and texture. Serve immediately while hot and enjoy your lightning-fast, flavorful dinner.
