- 1½ lbs sirloin steak, cut into 1-inch cubes

Potatoes
- 1½ lbs baby potatoes, halved (or quartered if large)

- ½ teaspoon paprika
- ½ teaspoon garlic powder

Garlic Butter
- 4 tablespoons butter
- 5 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh parsley, chopped (plus more for garnish)
Instructions
- Season Steak Bites: Season the sirloin steak cubes with salt and black pepper and set them aside to allow the seasoning to penetrate the meat.
- Cook Potatoes: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the halved or quartered baby potatoes cut-side down, then season with paprika, garlic powder, salt, and pepper. Cook for 10–12 minutes, stirring occasionally, until the potatoes are golden brown and fork-tender. Once cooked, remove the potatoes from the skillet and set aside.
- Sear Steak Bites: Increase the heat to medium-high and add the remaining olive oil to the skillet. Place the seasoned steak bites in a single layer and sear for 2–3 minutes on each side until browned and cooked to your desired doneness.
- Add Garlic Butter: Reduce the heat to medium, then add the butter and minced garlic to the skillet. Cook for 30–45 seconds until the garlic becomes fragrant but not burnt.
- Season and Combine: Sprinkle the Italian seasoning over the steak bites and stir to coat evenly in the garlic butter mixture. Return the cooked potatoes to the skillet and toss everything together to combine the flavors.
- Finish and Serve: Cook for an additional 1–2 minutes until everything is heated through. Garnish with fresh chopped parsley and serve immediately for a delicious and hearty meal.
