Instructions

- Mix Ingredients: In a large bowl, combine the drained potatoes, finely chopped onion, grated cheese, salt, black pepper, and nutmeg if using. Stir together until evenly mixed.
- Heat the Pan: Warm the butter and olive oil in a large skillet over medium heat until the butter is melted and the mixture is hot but not smoking.
- Form the Hash: Add the potato and cheese mixture to the skillet, spreading it evenly and pressing down firmly to form a compact layer. This helps the hash hold together and brown evenly.
- Cook the First Side: Cook uncovered for 8 to 10 minutes, allowing the bottom to become golden and crispy. Avoid moving the hash during this time to develop a crust.
