Potatoes and Cheese

Instructions

  1. Drain Excess Moisture: Place the grated potatoes in a clean towel and squeeze thoroughly to remove any excess water. This step helps achieve a crispy texture during cooking.
  2. Mix Ingredients: In a large bowl, combine the drained potatoes, finely chopped onion, grated cheese, salt, black pepper, and nutmeg if using. Stir together until evenly mixed.
  3. Heat the Pan: Warm the butter and olive oil in a large skillet over medium heat until the butter is melted and the mixture is hot but not smoking.
  4. Form the Hash: Add the potato and cheese mixture to the skillet, spreading it evenly and pressing down firmly to form a compact layer. This helps the hash hold together and brown evenly.
  5. Cook the First Side: Cook uncovered for 8 to 10 minutes, allowing the bottom to become golden and crispy. Avoid moving the hash during this time to develop a crust.
  6. Flip and Cook the Other Side: Carefully flip the hash using a spatula, or slide it onto a plate, invert it back into the skillet to cook the other side. Cook for another 6 to 8 minutes until the second side is also crispy and the cheese has melted throughout.
