Description

This French Onion Soup Pasta is the perfect comfort food, combining the rich, savory flavors of French onion soup with the satisfying texture of pasta


Ingredients

For the Breadcrumbs:

½ baguette, cut into small pieces

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon pepper

2 teaspoons oregano

For the Pasta:

300g Cavatappi macaroni (or any pasta)

5 onions, thinly sliced

½ cup beef broth

3 cups heavy cream

1 cup Parmesan cheese, grated

1 tablespoon flour + 3 tablespoons water for béchamel

1 teaspoon sugar (optional)

Fresh parsley (for garnish)

2 teaspoons salt

1 tablespoon garlic powder

1 tablespoon smoked paprika powder

½ teaspoon nutmeg


Instructions

Step 1: Prepare the Onions

  1. Slice onions and sauté in olive oil for 30-40 minutes until caramelized. Add beef broth if necessary to prevent sticking.

Step 2: Make the Béchamel Sauce

  1. Melt butter, add flour, and gradually whisk in heavy cream. Cook until the sauce thickens.

  2. Stir in 2/3 of the caramelized onions, Parmesan cheese, and seasonings.

Step 3: Cook the Pasta

  1. Boil pasta until just shy of al dente.

Step 4: Assemble the Pasta Bake

  1. Combine cooked pasta with béchamel sauce and stir.

  2. Transfer to a greased baking dish. Top with remaining onions and breadcrumbs.

Step 5: Bake

  1. Bake at 350°F (175°C) for 10-15 minutes or until golden and crispy.

Step 6: Rest and Serve

  1. Let it rest for 5 minutes. Garnish with fresh parsley or herbs and serve!
