Ingredients

  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp fresh rosemary, finely chopped
  • Salt and freshly ground black pepper, to taste

For the Crust:

  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Sauté vegetables: In a large skillet, melt butter over medium heat. Add the chopped onion and garlic, sautéing until softened. Add the carrots and cook until softened.
  3. Make the sauce: Stir in flour, then gradually add chicken broth and heavy cream, along with thyme, rosemary, salt, and pepper. Simmer until thickened.
  4. Combine filling: Add chicken and peas to the sauce, then remove from heat.
  5. Assemble: Roll out puff pastry, transfer chicken mixture to a baking dish, cover with pastry, seal, and brush with egg wash.
  6. Bake: Cut slits in the pastry, then bake for 25-30 minutes until golden brown and crispy.
