- 200 g shrimp, peeled and deveined
Scallion Oil and Sauce
- 4 scallions, cut into segments
- 3 tbsp oil (preferably vegetable or peanut oil)
- 2 tbsp soy sauce
- 1 tsp dark soy sauce
- 1 tsp sugar
- 1 tsp sesame oil
Instructions
- Cook Noodles: Cook lo mein noodles according to the package instructions until al dente. Drain and set aside.

- Cook Shrimp: In the same pan with the scallion oil, increase heat to medium and cook the shrimp until they turn pink and are cooked through, about 3-4 minutes.
- Make Sauce: Add soy sauce, dark soy sauce, sugar, and sesame oil to the shrimp and stir to combine thoroughly.
- Toss Noodles: Add the cooked noodles to the pan and toss well with the shrimp and sauce mixture to coat evenly and heat through.
- Garnish and Serve: Top the noodle and shrimp mixture with the fried scallions reserved earlier, then serve immediately while hot.
Notes
- Do not overcook shrimp to keep them tender and juicy.
- Add chili oil or fresh chili flakes for a spicy kick.
- Include additional vegetables like bok choy, carrots, or bell peppers for extra nutrition and texture.
- Use fresh scallions for the best flavor in the scallion oil.
