Ingredients

Noodles and Shrimp

  • 200 g lo mein noodles
  • 200 g shrimp, peeled and deveined

Scallion Oil and Sauce

  • 4 scallions, cut into segments
  • 3 tbsp oil (preferably vegetable or peanut oil)
  • 2 tbsp soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil


Instructions

  1. Cook Noodles: Cook lo mein noodles according to the package instructions until al dente. Drain and set aside.
  2. Prepare Scallion Oil: Heat the oil in a pan over low heat and fry the scallion segments gently until fragrant and slightly softened, about 5-7 minutes. Remove the scallions and reserve the oil.
  3. Cook Shrimp: In the same pan with the scallion oil, increase heat to medium and cook the shrimp until they turn pink and are cooked through, about 3-4 minutes.
  4. Make Sauce: Add soy sauce, dark soy sauce, sugar, and sesame oil to the shrimp and stir to combine thoroughly.
  5. Toss Noodles: Add the cooked noodles to the pan and toss well with the shrimp and sauce mixture to coat evenly and heat through.
  6. Garnish and Serve: Top the noodle and shrimp mixture with the fried scallions reserved earlier, then serve immediately while hot.
