Ingredients
For the Rice:
1 cup water
2 tablespoons soy sauce (ideally low-sodium)
1 cup Minute Rice
For the Fried Rice:
1 tablespoon vegetable oil
1 cup vegetables, fresh or frozen (choose your favorite)
1 tablespoon minced fresh garlic
1 pinch salt, to taste
1 pinch black pepper, to taste
1 large egg

Cook the Rice: In a saucepan over medium heat, bring 1 cup of water and 2 tablespoons of soy sauce to a boil. Once the water bubbles, remove the saucepan from heat. Pour in the Minute Rice, cover, and let it stand for 5 minutes (as per package directions).

Prepare the Vegetables: While the rice cooks, heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add 1 cup of vegetables, the minced garlic, and season with salt and pepper to taste. Sauté for 3-5 minutes or until the garlic becomes golden brown.

Scramble the Egg: Crack 1 large egg directly into the skillet with the vegetables and garlic. Scramble the egg and cook for about 2-3 minutes until fully cooked.

Combine the Rice: Once the egg is cooked, add the cooked rice to the skillet with the egg and vegetables. Stir everything together and cook for an additional 2-3 minutes, allowing any excess water from the rice to evaporate.
