Description

A creamy and spicy vegan pasta infused with Cajun spices, loaded with fresh vegetables, and coated in a rich dairy-free sauce. This dish offers a bold, satisfying flavor perfect for a quick and easy main course.

Ingredients

Pasta

  • 200 g pasta

Sauce & Vegetables

  • 1 cup coconut milk or plant-based cream
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook Pasta: Cook the pasta according to the package instructions until al dente, then drain and set aside.
  2. Sauté Vegetables and Garlic: Heat olive oil in a pan over medium heat and sauté the minced garlic until fragrant, then add the sliced bell pepper and zucchini. Cook until the vegetables are tender.
  3. Add Cajun Seasoning: Sprinkle the Cajun seasoning over the vegetables and stir thoroughly to coat them evenly, releasing the spices’ aroma.
  4. Simmer with Coconut Milk: Pour in the coconut milk or plant-based cream, stirring well. Allow the sauce to simmer gently until it thickens slightly to a creamy consistency.
  5. Toss Pasta in Sauce: Add the cooked pasta to the pan and toss everything together until the pasta is well coated with the sauce and vegetables.
  6. Adjust Seasoning and Serve: Taste and adjust salt, pepper, or Cajun seasoning if needed. Serve warm for a flavorful, creamy vegan Cajun pasta dish.

Notes

  • Add mushrooms or spinach for added texture and nutrients.
  • Adjust the amount of Cajun seasoning to suit your preferred spice level.
  • Use cashew cream instead of coconut milk for a richer, creamier texture.
