Instructions
- Make the dough: In a large bowl, combine the mashed potatoes, all-purpose flour, and salt. Mix thoroughly until all ingredients are well incorporated into a somewhat sticky dough.
- Knead the dough: Transfer the dough to a floured surface and knead it gently until it forms a soft, cohesive, and non-sticky dough. If the dough is too sticky, gradually add more flour as needed.
- Shape the noodles: Roll the dough into thin ropes of even thickness. Then, using a sharp knife, cut the ropes into noodle lengths of your preferred size.
- Cook the noodles: Bring a large pot of salted water to a boil. Drop the cut noodles into the boiling water. Cook the noodles for about 2 to 3 minutes or until they float to the surface, signaling they are done.
