This Easy Crock Pot Beef Roast is a classic American comfort dish featuring a tender, juicy beef chuck roast cooked low and slow with baby potatoes, carrots, and onions in a flavorful beef broth mixture. Perfect for a hearty family meal with minimal effort.
Ingredients
Beef and Vegetables
- 3–4 lb beef chuck roast
- 1 lb baby potatoes
- 4 carrots, chopped
- 1 onion, sliced
Seasonings and Liquids
- 2 cups beef broth
- 3 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1 tsp pepper
- 1 tsp dried thyme
Instructions
- Prepare vegetables: Place the baby potatoes, chopped carrots, and sliced onions evenly at the bottom of the crock pot, creating a bed for the beef roast.
- Season the roast: Sprinkle salt and pepper generously over the beef chuck roast, ensuring all sides are coated for enhanced flavor.
- Layer the roast: Set the seasoned beef roast on top of the arranged vegetables in the crock pot.
- Mix liquids: In a bowl, combine beef broth, minced garlic, Worcestershire sauce, and dried thyme, stirring to blend the flavors.
- Pour over roast: Pour the broth mixture evenly over the beef roast and vegetables.
- Cook: Cover and cook on LOW heat for 8 to 10 hours, or alternatively on HIGH heat for 5 to 6 hours, until the beef is fork-tender.
- Serve: Once cooked, shred or slice the roast and serve it hot alongside the cooked vegetables and savory cooking juices.
Notes
- Searing the roast in a hot pan before placing it into the crock pot adds extra depth of flavor and color.
- To make gravy, thicken the cooking juices with a cornstarch slurry (mix cornstarch with water) and simmer until thickened.
- Check that the beef broth is gluten-free if following a strict gluten-free diet.
