A tender and moist coffee cake topped with a buttery cinnamon streusel, perfect for a cozy breakfast or a delightful brunch treat.
Ingredients
Cake
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup melted butter
- 1 egg
- 1 teaspoon vanilla extract
Streusel Topping
- 1/2 cup brown sugar
- 1/2 cup flour
- 1 teaspoon cinnamon
- 1/4 cup cold butter, cubed
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan to prevent sticking.
- Mix Cake Batter: In a bowl, combine the flour, sugar, baking powder, and salt. Add the milk, melted butter, egg, and vanilla extract. Stir everything together until the batter is smooth without lumps.
- Spread Batter: Pour the smooth cake batter evenly into the prepared greased pan and spread it out to the edges for uniform thickness.
- Prepare Streusel Topping: In a separate bowl, mix together the brown sugar, flour, and cinnamon. Add the cold cubed butter and use your fingers or a pastry cutter to blend until the mixture forms crumbly pieces.
- Top the Cake: Sprinkle the streusel topping evenly over the surface of the cake batter in the pan, covering it completely.
- Bake: Place the pan in the preheated oven and bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool and Serve: Remove the cake from the oven and allow it to cool slightly before slicing and serving. Enjoy warm or at room temperature.
Notes
- For added texture and flavor, incorporate chopped nuts such as walnuts or pecans into the streusel topping.
- Use full-fat milk for a richer cake or substitute with a plant-based milk to make it dairy-free.
- Make sure the butter for the streusel is cold to create the perfect crumble.
- Check the cake at 25 minutes to avoid overbaking, as oven temperatures may vary.
