Description
A hearty one-pan breakfast hash featuring crispy golden potatoes, savory sausage, sautéed peppers and onions, topped with perfectly cooked eggs. This quick and filling meal is endlessly customizable and perfect for a comforting morning start.
Ingredients
Vegetables
- 2 cups diced potatoes
- ½ onion, diced
- ½ bell pepper, diced
Protein
- ½ lb breakfast sausage or bacon
- 2 eggs
Others
- 1 tbsp olive oil
- Salt, pepper & paprika to taste
Instructions
- Heat the oil: Pour 1 tablespoon of olive oil into a skillet and warm it over medium heat until shimmering.
- Cook the potatoes: Add the diced potatoes to the skillet and sauté for about 10 minutes, stirring occasionally, until they develop a crispy golden exterior and are tender inside.
- Add sausage and veggies: Stir in the breakfast sausage (or bacon), diced onion, and bell pepper into the skillet. Continue cooking for 5 to 7 minutes until the sausage is fully cooked and the vegetables have softened.
- Cook the eggs: Make small wells in the hash mixture and carefully crack the eggs on top. Cover the skillet with a lid and let the eggs cook for 3 to 4 minutes, or until the whites are set and yolks reach desired doneness.
- Season and serve: Season the hash with salt, pepper, and paprika to taste. Serve hot, optionally garnished with cheese or hot sauce for added flavor.
Notes
- For extra flavor, add shredded cheese or your favorite hot sauce on top.
- Switch diced potatoes with sweet potatoes for a nutritious and slightly sweeter variation.
- Feel free to add other veggies like mushrooms or spinach to customize your hash.
