  • 2 cups diced potatoes

Instructions

  1. Heat the oil: Pour 1 tablespoon of olive oil into a skillet and warm it over medium heat until shimmering.
  2. Cook the potatoes: Add the diced potatoes to the skillet and sauté for about 10 minutes, stirring occasionally, until they develop a crispy golden exterior and are tender inside.
  3. Add sausage and veggies: Stir in the breakfast sausage (or bacon), diced onion, and bell pepper into the skillet. Continue cooking for 5 to 7 minutes until the sausage is fully cooked and the vegetables have softened.
  4. Cook the eggs: Make small wells in the hash mixture and carefully crack the eggs on top. Cover the skillet with a lid and let the eggs cook for 3 to 4 minutes, or until the whites are set and yolks reach desired doneness.
