Ingredients
Potatoes and Coating
- 2 lbs baby potatoes, halved or quartered
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried parsley or Italian seasoning
- ½ tsp paprika
Optional Garnish
- Fresh parsley
- Grated Parmesan cheese
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) and allow it to fully preheat for optimal roasting temperature.
- Prepare baking sheet: Line a baking sheet with parchment paper or aluminum foil to prevent sticking and make clean-up easier.
- Make the garlic butter mixture: In a large mixing bowl, whisk together the melted unsalted butter, olive oil, minced garlic, salt, black pepper, dried parsley or Italian seasoning, and paprika until well combined.
- Toss the potatoes: Add the halved or quartered baby potatoes to the bowl and toss thoroughly to ensure every piece is evenly coated with the garlic butter mixture.
- Arrange for baking: Spread the coated potatoes out in a single layer on the lined baking sheet, placing them cut-side down to maximize crispiness on the exposed surface.
- Bake: Bake in the preheated oven for 35–40 minutes, flipping the potatoes halfway through to promote even browning and tenderness. Bake until the potatoes are golden brown and easily pierced with a fork.
- Optional finishing touch: For extra crispiness, broil the potatoes for an additional 2–3 minutes at the end of baking—watch closely to prevent burning.
- Garnish and serve: Remove the potatoes from the oven, garnish with fresh parsley and grated Parmesan cheese if desired, and serve hot as a delicious side dish.
Notes
- Yukon Gold or red potatoes work best for this recipe due to their texture and flavor.
- To achieve extra crispiness, broil the potatoes for 2–3 minutes at the end of baking; keep an eye to avoid burning.
- Add fresh or dried rosemary or thyme to the garlic butter mixture for an aromatic flavor boost.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days and reheat before serving.
