Chicken and Seasoning

- 2 tbsp olive oil or butter
- 1 tbsp rosemary
- 1 tbsp thyme
- Salt and pepper, to taste
Vegetables
- 1 onion, quartered
- 4 carrots, chopped
- 4 garlic cloves
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for slow roasting the chicken evenly.
- Prepare the Chicken: Rub the whole chicken thoroughly with olive oil or butter, then season it with rosemary, thyme, salt, and pepper to infuse flavor.
- Arrange Vegetables: Place the quartered onion, chopped carrots, and garlic cloves at the bottom of the Dutch oven to create a flavorful bed for the chicken.
- Roast Covered: Place the seasoned chicken on top of the vegetables in the Dutch oven. Cover with the lid and roast for 1 hour, allowing the chicken to cook through and absorb the aromatic flavors.
- Uncover and Crisp Skin: Remove the lid and roast the chicken uncovered for an additional 25 to 30 minutes. This step crisps up the skin, giving it an appetizing golden-brown finish.
