Description

Juicy, flavorful whole chicken roasted in a Dutch oven with herbs, garlic, and vegetables for a rustic, one-pot meal that is perfect for a comforting dinner.

Ingredients

Chicken and Seasoning

  • 1 whole chicken (45 lbs)
  • 2 tbsp olive oil or butter
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • Salt and pepper, to taste

Vegetables

  • 1 onion, quartered
  • 4 carrots, chopped
  • 4 garlic cloves

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for slow roasting the chicken evenly.
  2. Prepare the Chicken: Rub the whole chicken thoroughly with olive oil or butter, then season it with rosemary, thyme, salt, and pepper to infuse flavor.
  3. Arrange Vegetables: Place the quartered onion, chopped carrots, and garlic cloves at the bottom of the Dutch oven to create a flavorful bed for the chicken.
  4. Roast Covered: Place the seasoned chicken on top of the vegetables in the Dutch oven. Cover with the lid and roast for 1 hour, allowing the chicken to cook through and absorb the aromatic flavors.
  5. Uncover and Crisp Skin: Remove the lid and roast the chicken uncovered for an additional 25 to 30 minutes. This step crisps up the skin, giving it an appetizing golden-brown finish.

Notes

  • Add potatoes or lemon to the Dutch oven along with the vegetables for enhanced flavor and heartiness.
  • Use leftover bones after carving the chicken to make a homemade broth or soup, minimizing waste.
