- 1 bottle Guinness beer (nonalcoholic version optional)

Instructions
- Prepare the Beef: Toss the beef cubes in flour, salt, and pepper until evenly coated to enhance browning and help thicken the stew later.
- Brown the Beef: Heat the oil in a Dutch oven over medium-high heat. Add the beef cubes and brown them on all sides to develop flavor, about 5-7 minutes.
- Sauté Aromatics: Add the chopped onion and minced garlic to the Dutch oven and cook for about 3 minutes, stirring occasionally, until softened and fragrant.
- Add Liquids and Tomato Paste: Stir in the tomato paste, then pour in the bottle of Guinness and beef broth, scraping up any browned bits from the bottom of the pot.
- Add Vegetables and Seasonings: Add the sliced carrots, cubed potatoes, thyme, and bay leaf to the pot. Stir to combine all ingredients.
- Cook the Stew: For Dutch oven: bring to a simmer, then cover and cook on the stovetop on low heat or in an oven preheated to 325°F (163°C) for 2 to 2.5 hours until beef is tender. For slow cooker: transfer ingredients and cook on low for 7-8 hours or on high for 4 hours.
- Finish and Serve: Remove the bay leaf. For a thicker stew, simmer uncovered for the last 10-15 minutes. Adjust seasoning with salt and pepper if needed before serving.
