Ingredients
Dough
- 2 ½ cups all-purpose flour
- 1 packet (2 ¼ tsp) active dry yeast
- 1 tablespoon sugar
- 1 teaspoon salt
- ¾ cup warm milk
- 2 tablespoons unsalted butter, melted
Filling
- 4 large eggs
- 4 breakfast sausage links, cooked and crumbled
- 1 cup shredded cheddar cheese
- ½ cup diced onions
- 1 tablespoon butter
- Salt and pepper to taste
Topping
- 1 egg, beaten (for egg wash)
- Optional: sesame seeds or poppy seeds for garnish
Instructions
- Prepare the Dough: In a large bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy. Then add melted butter, salt, and flour gradually, mixing until a soft dough forms. Knead on a floured surface for about 8-10 minutes until smooth and elastic.
- Let Dough Rise: Place the dough in a greased bowl, cover it with a damp cloth, and allow it to rise in a warm place for 1 hour or until doubled in size.
- Cook Filling Ingredients: In a skillet over medium heat, melt butter and sauté diced onions until translucent. Beat the eggs and scramble them in the skillet with the onions, seasoning with salt and pepper. Remove from heat and mix in crumbled cooked sausages and shredded cheddar cheese.
- Assemble Rolls: Punch down the risen dough and roll it out on a floured surface into a large rectangle, approximately 12×16 inches. Spread the egg and sausage mixture evenly over the dough, then roll it up tightly from the longer side, forming a log. Cut the log into 8 equal pieces.
- Second Rise: Place the rolls cut-side up on a greased baking pan. Cover and let them rise for an additional 30 minutes until puffy.
- Apply Egg Wash and Bake: Preheat the oven to 375°F (190°C). Brush the tops of the rolls with beaten egg and sprinkle with optional seeds if desired. Bake for 20-25 minutes or until golden brown and cooked through.
- Cool and Serve: Remove rolls from the oven and let cool for 5 minutes before serving warm.
Notes
- You can substitute breakfast sausage with bacon or ham as preferred.
- For a vegetarian version, omit the meat and add vegetables like bell peppers or mushrooms.
- Store leftover rolls in an airtight container and reheat in the oven or microwave.
- Make dough ahead and refrigerate overnight to develop flavor.
