Ingredients
1 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
1/2 cup light brown sugar, lightly packed
1/2 cup granulated sugar
8 tablespoons unsalted butter, softened
1/3 cup honey
1 large egg
1 teaspoon vanilla extract
6 tablespoons toasted sesame seeds
Instructions

Whisk together flour, baking powder, baking soda, and salt. Set aside.

Cream butter, brown sugar, and granulated sugar until light and fluffy.

Beat in honey, egg, and vanilla extract until smooth.

Gradually mix in dry ingredients until dough forms. Stir in 4 tablespoons toasted sesame seeds. Chill dough for 2+ hours.

Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.

Scoop 1.5-tablespoon portions of dough, roll tops in remaining sesame seeds, and place 2 inches apart on sheet.

Bake 10-12 minutes until edges are golden. Cool 5 minutes on sheet, then transfer to rack.
