Plain Roasted Sweet Potatoes:

Peel and cube the sweet potatoes into 1/2-inch pieces. Place them on your largest sheet pan. -
Season:
Drizzle the sweet potatoes with melted coconut oil, sprinkle with sea salt and brown sugar. Toss everything together to coat the sweet potatoes evenly. -
Spread Evenly:
Spread the potatoes out in a single layer on the pan to ensure even roasting. -
Roast:
Roast the sweet potatoes for 27-35 minutes, flipping every 10-15 minutes. The potatoes should be golden and crispy on the edges when done.
