2 pounds sweet potatoes (about 3 large), peeled and cut into 1/2-inch cubes

2 tablespoons olive oil

3/4 teaspoon fine sea salt (use less if using table salt)

1/4 teaspoon ground pepper

1/2 teaspoon ground chili powder (optional for smoky flavor)

1/2 teaspoon paprika

1/2 teaspoon ground cumin

1/2 teaspoon garlic powder


Instructions

Plain Roasted Sweet Potatoes:

  1. Preheat the Oven:
    Preheat your oven to 425°F (220°C).

  2. Prepare the Potatoes:
    Peel and cube the sweet potatoes into 1/2-inch pieces. Place them on your largest sheet pan.

  3. Season:
    Drizzle the sweet potatoes with melted coconut oil, sprinkle with sea salt and brown sugar. Toss everything together to coat the sweet potatoes evenly.

  4. Spread Evenly:
    Spread the potatoes out in a single layer on the pan to ensure even roasting.

  5. Roast:
    Roast the sweet potatoes for 27-35 minutes, flipping every 10-15 minutes. The potatoes should be golden and crispy on the edges when done.

Seasoned Roasted Sweet Potatoes:

  1. Preheat the Oven:
    Preheat your oven to 425°F (220°C).

  2. Prepare the Potatoes:
    Peel and cube the sweet potatoes into 1/2-inch pieces and place them on a baking sheet.
