Crunchy and satisfying peanut butter oatmeal bars that make for an ideal quick snack or energy boost. These bars combine the natural goodness of oats with the rich, creamy flavor of peanut butter, sweetened with honey and brown sugar, then baked to golden perfection with optional chocolate chips for extra indulgence.

- 2 cups rolled oats
- 1/2 cup brown sugar
- 1/2 cup chocolate chips (optional)
Wet Ingredients
- 1/2 cup peanut butter
- 1/3 cup honey
- 1/4 cup butter
- 1 tsp vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) and line a baking pan with parchment paper or lightly grease it to prevent sticking.
- Melt Wet Ingredients: In a saucepan over low heat, melt together the butter, peanut butter, honey, and brown sugar, stirring frequently until smooth and fully combined.
- Add Vanilla: Remove the saucepan from heat and stir in the vanilla extract, allowing the flavors to meld.
- Combine with Oats: Transfer the wet mixture into a mixing bowl and add the rolled oats. Stir thoroughly until the oats are evenly coated with the peanut butter mixture.
- Press Mixture: Press the oat mixture firmly and evenly into the prepared baking pan to form a compact layer.
- Add Chocolate Chips (Optional): Sprinkle chocolate chips evenly over the top, gently pressing them into the surface to adhere.
- Bake: Bake in the preheated oven for 15–18 minutes or until the bars turn a beautiful golden color around the edges.
- Cool and Cut: Remove from the oven and let the bars cool completely in the pan. Once cooled, lift out and cut into 12 bars.
Notes
- For softer bars, reduce baking time by a few minutes to prevent them from becoming too crunchy.
- Store the bars in an airtight container at room temperature for up to 5 days or refrigerate for extended freshness.
- You can substitute honey with maple syrup for a vegan alternative.
- Add nuts or dried fruit for variation and extra texture.
