Description
Crispy on the outside, tender on the inside, this air-fried herb-spiced eggplant is a healthy and flavorful dish that’s easy to prepare. Salting removes bitterness while avocado oil and aromatic herbs create a deliciously crispy coating.
Ingredients
1 large eggplant, peeled as desired and diced (1-inch cubes)
2 tablespoons avocado oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/4 teaspoon kosher salt (+ extra for salting eggplant)
1/2 teaspoon powdered garlic
1/2 teaspoon smoked paprika
Instructions

Spread cubed eggplant on a flat surface and salt generously. Let sit 15–30 minutes, then pat dry.

Toss eggplant cubes with avocado oil in a bowl.

Add rosemary, thyme, salt, garlic powder, and smoked paprika. Mix well.

Air fry at 400°F for 18 minutes, tossing halfway for even crisping.

Serve immediately for best texture.
Notes
- Peeling the eggplant is optional.
- Can be baked at 425°F for 25–30 minutes as an alternative.
- Store leftovers in the fridge up to 3 days. Reheat in air fryer or oven.
