Description

Ingredients

1 Tbsp olive oil

1 lb beef sausage (mild or spicy), casing removed

1 small onion, diced

34 cloves garlic, minced

1 tsp dried Italian seasoning

½ tsp paprika (optional)

¼ tsp crushed red pepper flakes (optional, for heat)

4 cups chicken broth

1 cup heavy cream

1 package (about 20 oz) cheese ravioli (fresh or frozen)

½ cup sun-dried tomatoes, drained and chopped

3 cups baby spinach

½ cup grated Parmesan cheese

Salt and pepper to taste

Optional Garnishes

Fresh basil or parsley


Instructions

  1. Brown the Sausage:
    Heat olive oil in a large Dutch oven or soup pot over medium heat. Add beef sausage, breaking it up with a spoon. Cook for 5–7 minutes until browned and fully cooked.

  2. Sauté Aromatics:
    Add the diced onion and cook for 2–3 minutes until softened. Stir in minced garlic, Italian seasoning, paprika (optional), and red pepper flakes (optional) and cook for another minute until fragrant.

  3. Add Liquids and Simmer:
    Pour in chicken broth and bring to a boil. Reduce the heat to medium-low and stir in heavy cream. Let the soup simmer uncovered for 5–7 minutes to allow the flavors to meld.

  4. Add Ravioli and Tomatoes:
    Stir in ravioli and sun-dried tomatoes. Simmer for 5–6 minutes (or follow ravioli package instructions) until ravioli is cooked through and tender.

  5. Finish with Spinach and Cheese:
    Turn off the heat and stir in spinach until wilted. Add grated Parmesan cheese and stir until melted. Season with salt and pepper to taste.

  6. Serve:
    Ladle soup into bowls and garnish with fresh basil or parsley. Serve hot with crusty bread or a fresh salad on the side.
