Description

A rich and creamy Tex-Mex style taco soup featuring seasoned ground beef, beans, corn, diced tomatoes with green chiles, and melted cheeses. This cozy one-pot meal is perfect for a comforting lunch or dinner and is easy to prepare on the stovetop.

Ingredients

Meat and Vegetables

  • 1 pound ground beef or turkey
  • 1 onion, diced

Seasonings and Canned Goods

  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chiles (Rotel)

Broth and Dairy

  • 3 cups chicken broth
  • 4 oz cream cheese
  • 1 cup shredded cheddar cheese

Additional

  • Salt and pepper to taste

Instructions

  1. Brown the Meat and Onion: In a pot over medium heat, cook the ground beef or turkey along with the diced onion until the meat is fully browned and the onions are translucent. Drain off any excess fat to reduce greasiness.
  2. Add Seasonings and Vegetables: Stir in the taco seasoning, drained black beans, corn, diced tomatoes with green chiles, and chicken broth. Mix everything well and bring the soup to a simmer. Let it cook gently for about 10 minutes to allow the flavors to meld.
  3. Melt the Cream Cheese: Add the cream cheese to the simmering soup and stir continuously until the cream cheese is fully melted and incorporated, creating a creamy texture.
  4. Incorporate the Cheddar Cheese: Gradually stir in the shredded cheddar cheese, continuing to mix until the cheese is melted and the soup becomes smooth and cheesy.
  5. Season and Serve: Taste the soup and adjust the seasoning with salt and pepper as needed. Serve the soup warm, optionally garnished with tortilla chips, sour cream, avocado, cilantro, or jalapeños for added flavor and texture.

Notes

  • Top with tortilla chips, sour cream, avocado, cilantro, or jalapeños for extra flavor and texture.
  • Use ground turkey as a leaner alternative to beef for lower fat content.
  • For a spicier soup, add additional diced jalapeños or a dash of hot sauce during cooking.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheat well.
