Ingredients
For the Mascarpone Cream:
15.87 oz mascarpone cheese
1 teaspoon vanilla extract
½ cup pumpkin puree
⅔ cup granulated sugar
⅓ cup brown sugar
2 teaspoons pumpkin pie spice
¼ teaspoon kosher salt
2 cups heavy cream (cold)
For the Assembly:
28 ladyfingers
2 cups coffee (espresso or strong coffee)
Cocoa powder for topping
Instructions
-
Prepare the Coffee:
Brew the espresso or strong coffee and let it cool for a few minutes. Set aside while you prepare the mascarpone cream. -
Mix the Mascarpone Cream:
In a large mixing bowl, add the mascarpone cheese, brown sugar, granulated sugar, kosher salt, and pumpkin pie spice. Using an electric hand mixer, beat until well combined. -
Add the Pumpkin Puree:
Stir in the pumpkin puree until fully incorporated into the mascarpone mixture. -
Whip the Cream:
Add the cold heavy cream to the mascarpone mixture and continue mixing for 3-4 minutes until the filling thickens and becomes creamy. -
Assemble the Tiramisu:
Dip the ladyfingers quickly (1-2 seconds) in the cooled coffee and arrange them in a single layer in a 13×9 inch baking dish. -
Add the Mascarpone Filling:
Spread half of the pumpkin mascarpone mixture over the soaked ladyfingers and smooth it out with a spatula. Layer more soaked ladyfingers on top, then pipe the remaining cream mixture over the second layer of ladyfingers. -
Chill and Set:
Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours to allow the flavors to meld and the ladyfingers to soften. -
Top and Serve:
Just before serving, dust generously with cocoa powder. Serve
Notes
- Customize the Flavor: For a more decadent version, drizzle caramel sauce over the top just before serving.
- Ladyfinger Substitutes: If you can’t find ladyfingers, you can use sponge cake or even graham crackers as a substitute.
- Make-Ahead: This dessert is perfect for making ahead—prepare it a day in advance for optimal flavor.
- For a Lighter Version: You can reduce the amount of sugar or use low-fat mascarpone or cream if you prefer a lighter dessert.
