A cozy and creamy pasta dish made with pumpkin puree, garlic, sour cream, and Parmesan. This comforting fall-inspired recipe comes together in just 30 minutes.
Ingredients
1 lb rigatoni pasta
1 small onion, finely chopped
2 cloves garlic, minced
2 tbsp butter
2 cups pumpkin puree
2 cups chicken broth
¼ cup heavy cream
½ cup sour cream
¼ tsp ground nutmeg
1 tsp salt
¼ tsp black pepper
2 tbsp fresh parsley, minced
¼ cup Parmesan cheese (for garnish)
Instructions

Cook rigatoni in salted water until al dente. Drain and set aside.

In a large skillet, sauté onion and garlic in butter over medium heat until soft.

Add pumpkin puree, chicken broth, heavy cream, sour cream, nutmeg, salt, and pepper. Whisk until smooth.

Simmer sauce for 10 minutes, stirring occasionally.

Stir in cooked pasta and simmer for another 2–3 minutes.

Serve topped with Parmesan cheese and parsley.
Notes
- For a vegetarian version, use vegetable broth
- Add protein like grilled chicken or sausage for a fuller meal
