Ingredients
Steak
- 1 lb sirloin steak, cut into bite-sized pieces
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
Pasta
- 20 oz refrigerated cheese tortellini
- Water and salt for boiling
Creamy Garlic Sauce
- 2 tablespoons butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- ½ cup beef broth
- ¾ cup freshly grated Parmesan cheese
- ½ teaspoon Italian seasoning
- ¼ teaspoon paprika
- Salt and pepper, to taste
Optional Garnish
- Fresh parsley, chopped
- Extra Parmesan cheese
Instructions
- Prepare Tortellini: Bring a large pot of salted water to a boil. Cook the refrigerated cheese tortellini according to package instructions until tender. Drain well and set aside.
- Season and Sear Steak: Season the sirloin steak pieces generously with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the steak pieces and sear them for 2–3 minutes on each side until nicely browned.
- Add Butter to Steak: Add 1 tablespoon butter to the skillet with the steak and toss the pieces in the melted butter for added richness. Remove the steak from the skillet and set aside to keep warm.
- Make Creamy Garlic Sauce: Reduce heat to medium and melt 2 tablespoons butter in the same skillet. Add minced garlic and sauté for about 30 seconds or until fragrant. Pour in beef broth and scrape the bottom of the pan to loosen browned bits for extra flavor. Stir in the heavy cream, Italian seasoning, and paprika, then simmer for 3–5 minutes until the sauce slightly thickens.
- Finish Sauce with Cheese: Add the freshly grated Parmesan cheese to the simmering sauce and stir continuously until smooth and creamy. Season the sauce with salt and pepper to taste.
- Toss Tortellini in Sauce: Add the cooked tortellini to the skillet and gently toss to thoroughly coat the pasta with the creamy garlic sauce.
- Combine Steak with Pasta: Return the seared steak pieces to the skillet and stir until the steak is warmed through and evenly distributed.
- Garnish and Serve: Sprinkle fresh chopped parsley and extra Parmesan cheese on top for a fresh and flavorful finish. Serve immediately while warm and creamy.
Notes
- Ribeye or New York strip steak can be used for a more tender and flavorful cut.
- Use freshly grated Parmesan cheese for the best melting and creamy texture; avoid pre-shredded versions.
- Add sautéed spinach or mushrooms to the sauce for a nutritious vegetable boost.
- The sauce thickens as it cools; loosen it with a splash of cream or beef broth if needed when reheating.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
