- Heat the oil or butter: Heat olive oil or butter in a large pot over medium heat to create a flavorful base for the soup.
- Sauté the onion: Add the chopped onion and cook for 4–5 minutes until it becomes soft and translucent, developing sweetness.
- Add garlic and ginger: Stir in minced garlic and grated ginger, cooking for 30 seconds until fragrant to infuse the soup with aromatic notes.
- Add carrots and broth: Add peeled and sliced carrots along with the broth, salt, and black pepper. Bring the mixture to a boil to start cooking the carrots thoroughly.
- Simmer: Reduce the heat and let it simmer gently for 20–25 minutes until the carrots are very tender and easy to blend.
- Blend the soup: Using an immersion blender or a regular blender in batches, puree the soup until completely smooth, creating a creamy texture.
- Stir in cream or coconut milk: Mix in the coconut milk or heavy cream along with optional lemon juice or cumin. Warm the soup gently for 2–3 minutes to blend flavors without boiling.
- Serve: Ladle the soup into bowls and serve warm, enjoying the smooth and vibrant flavors.
