Description
A rich and creamy potato soup featuring tender cubed potatoes, sautéed onions, and a smooth, comforting broth base. This versatile soup is perfect for a cozy meal and can be topped with cheese, bacon, or fresh chives for added flavor.
Ingredients
Soup Base
- 2 tbsp butter
- 1 onion, diced
- 3 tbsp flour
- 4 cups potatoes, peeled and cubed
- 3 cups chicken or vegetable broth
- 1½ cups milk or half-and-half
- Salt and pepper, to taste
Optional Toppings
- Cheese (shredded)
- Bacon (cooked and crumbled)
- Chives (chopped)
Instructions
- Sauté the Onion: Melt the butter in a large pot over medium heat. Add the diced onion and cook until softened and translucent, about 5 minutes.
- Create the Roux: Stir in the flour and cook for 1 minute, continuously stirring to form a smooth roux that will thicken the soup.
- Add Potatoes and Broth: Pour in the peeled and cubed potatoes along with the chicken or vegetable broth. Bring to a simmer and cook for 15 to 20 minutes, or until the potatoes are tender when pierced with a fork.
- Incorporate Milk and Seasonings: Stir in the milk or half-and-half. Season the soup with salt and pepper according to taste. Heat through gently without boiling.
- Blend for Creaminess: Use a potato masher or an immersion blender to mash or partially blend the soup, leaving some chunks for texture if desired.
- Serve and Garnish: Ladle the soup into bowls and garnish with your choice of shredded cheese, crumbled bacon, and chopped chives for extra flavor and texture.
Notes
- Leave some potato chunks unblended to maintain a hearty texture.
- Use an immersion blender to make the soup fully smooth if preferred.
- Vegetarian option available by using vegetable broth instead of chicken broth.
- Adjust thickness by adding more broth or milk to desired consistency.
