Description

This creamy potato soup is a comforting and hearty dish perfect for chilly days. Made with simple ingredients like potatoes, onions, garlic, broth, and cream, it delivers a rich texture and delicious flavor. Ideal as a starter or a light meal, this soup is both satisfying and easy to prepare on the stovetop.

Ingredients

Soup Ingredients

  • 4 large potatoes, peeled and diced (about 4 cups)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt to taste
  • Black pepper to taste

Optional Garnishes

  • Chopped chives or green onions
  • Grated cheddar cheese
  • Crispy bacon bits
  • Sour cream

Instructions

  1. Prepare the Vegetables: Peel and dice the potatoes into even chunks for uniform cooking. Chop the onion and mince the garlic finely to enhance the soup’s flavor base.
  2. Sauté Aromatics: In a large pot over medium heat, melt the butter. Add the chopped onion and garlic, sautéing until translucent and fragrant, about 3-4 minutes.
  3. Add Potatoes and Broth: Add the diced potatoes to the pot, then pour in the broth. Stir to combine, increase heat to bring the mixture to a boil.
  4. Simmer the Soup: Reduce the heat to low and let the soup simmer, uncovered, for 20-25 minutes or until potatoes are tender when pierced with a fork.
  5. Blend Soup: Using an immersion blender, blend the soup directly in the pot until smooth and creamy. Alternatively, carefully transfer batches to a blender and purée, then return to pot.
  6. Stir in Cream and Season: Pour in the heavy cream and stir well. Season with salt and freshly ground black pepper to your taste. Warm the soup gently without boiling.
  7. Serve and Garnish: Ladle the soup into bowls and garnish with your choice of chopped chives, cheddar cheese, bacon bits, or a dollop of sour cream for added richness and texture.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or milk.
  • The soup can be made vegetarian by using vegetable broth instead of chicken broth.
  • Blending intensity can be adjusted for a chunkier or smoother texture depending on preference.
  • Leftover soup keeps well in the refrigerator for up to 3 days and can be refrigerated or frozen.
  • Add herbs like thyme or rosemary during simmering for extra flavor.
