Ingredients
1 (3-4 lb) turkey breast, bone-in and skin-on
2 cups fresh cranberries (or thawed frozen cranberries)
1 cup orange juice
½ cup honey (or maple/agave syrup)
2 tablespoons orange zest
2 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves (or sage/tarragon)
Salt and pepper to taste
Optional Variations:
Splash of Grand Marnier or orange liqueur for an adult twist
Chopped pecans sprinkled over the glaze for crunch
Pinch of red pepper flakes or cayenne for heat
Instructions
-
Prepare the Glaze:
In a small saucepan, combine cranberries, orange juice, honey, and orange zest. Bring to a boil, then simmer for 10-15 minutes until cranberries burst and mixture thickens. Allow to cool. -
Prep the Turkey:
Pat turkey breast dry with paper towels. Mix olive oil, garlic, rosemary, thyme, salt, and pepper in a small bowl. -
Season the Turkey:
Loosen skin and rub half the herb mixture under it. Spread remaining mixture over the skin and inside the cavity. -
Roast:
Place turkey in a roasting pan, skin side up. Roast at 375°F (190°C) for 20 minutes per pound, or until internal temperature reaches 165°F (74°C). -
Glaze the Turkey:
During the last 30 minutes of roasting, brush cranberry orange glaze over the turkey every 10 minutes for a glossy, flavorful coating. -
Rest and Serve:
Remove from oven and let rest 15-20 minutes. Carve and serve with any remaining glaze drizzled on top.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
