Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the perfect temperature for baking your enchiladas evenly and thoroughly.
- Prepare Filling: In a mixing bowl, combine the cooked shredded chicken, cottage cheese, sour cream, half of the shredded cheese, cumin, and garlic powder. Stir well until all ingredients are fully incorporated into a creamy, seasoned mixture.
- Assemble Enchiladas: Spoon an even amount of the chicken mixture onto each tortilla. Roll each tortilla tightly to enclose the filling, then place the rolled tortillas seam-side down in a baking dish to prevent them from unrolling during baking.
- Add Sauce and Cheese: Pour the entire can of enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle the remaining shredded cheese on top to create a melty, golden topping as it bakes.
