Description

A flexible and flavorful vegan chow mein recipe that uses a mix of your favorite vegetables tossed in a rich soy sauce-based stir-fry sauce for a quick, satisfying, and easy meal.

Ingredients

Noodles

  • 200 g chow mein noodles

Vegetables

  • 2 cups mixed vegetables (cabbage, carrots, bell peppers, bean sprouts)
  • 2 green onions, sliced

Sauce and Seasonings

  • 2 tbsp oil (vegetable or canola oil recommended)
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil

Instructions

  1. Cook Noodles: Prepare the chow mein noodles according to the package instructions, ensuring they are cooked al dente. Drain well and set aside to prevent sogginess.
  2. Sauté Garlic: Heat 2 tablespoons of oil in a wok or large pan over medium-high heat. Add the minced garlic and cook until fragrant, about 30 seconds, taking care not to burn it.
  3. Stir-Fry Vegetables: Add the mixed vegetables to the pan and stir-fry for about 3-5 minutes until they become slightly tender but still retain some crunch.
  4. Add Noodles: Add the cooked noodles into the pan with the vegetables, tossing to combine evenly.
  5. Make Sauce and Toss: Stir in the soy sauce, dark soy sauce, sugar, and sesame oil. Toss everything continuously so the noodles and vegetables are evenly coated with the flavorful sauce.
  6. Garnish and Serve: Remove from heat, garnish with sliced green onions, and serve the chow mein hot for best flavor and texture.

Notes

  • Use any vegetables you need to use up, such as broccoli, snow peas, mushrooms, or zucchini.
  • Add tofu, mushrooms, or other plant-based proteins to enhance protein content.
  • Adjust soy sauce quantities to your preferred saltiness and flavor intensity.
