Description

This slow cooker beef stew is packed with tender beef chunks, hearty potatoes, and sweet baby carrots in a savory broth with herbs. Simple to prepare and perfect for cozy dinners.


Ingredients

2 pounds beef chuck roast, cut into 2-inch pieces

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4 large potatoes, peeled and chunked

2 cups baby carrots

4 slices bread for serving

Fresh parsley, chopped for garnish


Instructions

  1. Brown beef in olive oil, season with salt and pepper; transfer to slow cooker.

  2. Sauté onion and garlic in skillet; add beef broth and Worcestershire sauce, scrape browned bits.

  3. Add thyme, rosemary, salt, and pepper; pour over beef.

  4. Add potatoes and carrots; stir gently.

  5. Cook on low for 8 hours or high for 4 hours.

  6. Toast bread; serve stew over bread with parsley garnish.

  • For thicker stew, add cornstarch slurry at the end.
