Ingredients

Beef Roast

  • 34 lb beef roast (sirloin, rump, or chuck)

Seasoning

  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp rosemary
  • 1 tsp thyme


Instructions

  1. Preheat Oven. Preheat your oven to 450°F (230°C) to prepare for the initial high-temperature roasting that will sear the outside of the beef and lock in juices.
  2. Season and Sear Beef. Rub the beef roast evenly with olive oil, salt, black pepper, garlic powder, rosemary, and thyme. For enhanced flavor and crust, sear all sides of the beef in a hot skillet until browned, about 2-3 minutes per side—this step is optional but recommended.
  3. High-Heat Roasting. Place the beef roast in the preheated oven and roast at 450°F (230°C) for 15 minutes to develop a flavorful crust.
  4. Reduce Temperature and Continue Roasting. Lower the oven temperature to 325°F (165°C) and continue roasting the beef for 1 to 1½ hours, or until it reaches your preferred level of doneness (135°F internal temperature for medium rare).
  5. Rest the Roast. Remove the beef from the oven and let it rest, loosely covered with foil, for 15 minutes. This allows the juices to redistribute, resulting in a juicier, more tender roast.
  6. Slice and Serve. After resting, slice the beef against the grain and serve with your choice of sides such as roasted vegetables or mashed potatoes.
