Description

A simple, wholesome no-bake treat that’s sweet, salty, crunchy, and incredibly satisfying. Medjool dates stuffed with peanut butter, topped with chopped peanuts, and dipped in dark chocolate.


Ingredients

12 medjool dates, pitted

1/4 cup creamy peanut butter

1/4 cup chopped roasted peanuts

100g dark chocolate (70% cocoa or higher)

1 tsp coconut oil

Sea salt flakes (for garnish)


Instructions

  1. Slice each date lengthwise and remove the pit to create a pocket.

  2. Fill each date with about 1 tsp of peanut butter.

  3. Sprinkle chopped peanuts on top of the peanut butter and press gently.

  4. In a microwave-safe bowl, melt the chocolate and coconut oil in 20-second intervals, stirring until smooth.

  5. Dip each stuffed date into the melted chocolate, coating fully. Let the excess drip off.

  6. Place dipped dates on a parchment-lined tray and sprinkle with sea salt.

  7. Chill in the refrigerator for 20–30 minutes until set.

  8. Serve cold or at room temperature. Store leftovers in the fridge or freezer.

Notes

  • Use natural peanut butter for a smoother filling.
  • You can sub almond or cashew butter for a twist.
  • For extra texture, add a small pretzel piece inside each date.
  • If chocolate hardens during dipping, reheat gently.
