Description
A simple, wholesome no-bake treat that’s sweet, salty, crunchy, and incredibly satisfying. Medjool dates stuffed with peanut butter, topped with chopped peanuts, and dipped in dark chocolate.
Ingredients
12 medjool dates, pitted
1/4 cup creamy peanut butter
1/4 cup chopped roasted peanuts
100g dark chocolate (70% cocoa or higher)
1 tsp coconut oil
Sea salt flakes (for garnish)
Instructions

Slice each date lengthwise and remove the pit to create a pocket.

Fill each date with about 1 tsp of peanut butter.

Sprinkle chopped peanuts on top of the peanut butter and press gently.

In a microwave-safe bowl, melt the chocolate and coconut oil in 20-second intervals, stirring until smooth.

Dip each stuffed date into the melted chocolate, coating fully. Let the excess drip off.

Place dipped dates on a parchment-lined tray and sprinkle with sea salt.

Chill in the refrigerator for 20–30 minutes until set.

Serve cold or at room temperature. Store leftovers in the fridge or freezer.
Notes
- Use natural peanut butter for a smoother filling.
- You can sub almond or cashew butter for a twist.
- For extra texture, add a small pretzel piece inside each date.
- If chocolate hardens during dipping, reheat gently.
