Description
Chocolate Chip Cookie Brownies, also known as Brookies, combine the best of both worlds—the chewy, fudgy texture of brownies and the gooey, sweet goodness of chocolate chip cookies. With layers of soft brownie on the bottom and a golden cookie dough topping, every bite offers the perfect balance of rich chocolate and sweet cookie flavor.
Ingredients
Brownie Layer:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup chocolate chips (optional)
Cookie Dough Layer:
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips
Instructions
- Preheat your oven: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
- Making the Brownie Layer: In a medium bowl, combine the melted butter and sugar for the brownie base. Stir until well combined. Add eggs and vanilla, whisk until smooth. Mix in cocoa powder, flour, salt, and baking powder. Stir until smooth, then fold in chocolate chips (optional). Pour into the prepared baking dish, spreading evenly.
- Preparing the Cookie Dough: For the cookie dough, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Add vanilla and egg, mixing until combined. In another bowl, whisk flour, baking soda, and salt, then gradually add to the wet ingredients. Stir until combined, then fold in chocolate chips.
- Layering and Baking: Drop spoonfuls of the cookie dough over the brownie batter and gently spread it over the top, leaving some brownie visible underneath. Bake for 30-35 minutes, or until a toothpick comes out with moist crumbs. Let cool before slicing into squares and indulging in these decadent treats.
Notes
- If you want to add nuts, you can fold in 1/2 cup of chopped walnuts or pecans into either the brownie batter or the cookie dough.
- For a healthier twist, you can substitute coconut sugar or maple syrup for the granulated sugar.
- If you’re using a 9×9-inch pan, check the brownies after 25 minutes to adjust the baking time.
