Description

These Chocolate Chip Banana Muffins are soft, fluffy, and made with healthier ingredients like Greek yogurt, honey, and coconut oil. Packed with real banana flavor and mini chocolate chips, they’re perfect for breakfast, snacks, or lunchboxes.


Ingredients

1 cup mashed banana (23 ripe bananas)

¼ cup honey

¼ cup coconut oil, melted

2 tablespoons almond milk or dairy milk

1 egg

¾ cup plain Greek yogurt

1 teaspoon vanilla extract

1½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

¼ teaspoon salt

¼ cup mini chocolate chips


Instructions

  1. Mash bananas in a large bowl. Stir in honey and melted coconut oil.

  2. Beat in the egg, then add milk, Greek yogurt, and vanilla.

  3. In a separate bowl, whisk flour, baking soda, baking powder, and salt.

  4. Add dry ingredients to wet, followed by chocolate chips. Stir gently to combine.

  5. Let batter rest 10 minutes.

  6. Preheat oven to 350°F (175°C). Line muffin tin.

  7. Fill muffin cups ¾ full using a ¼ cup scoop.

  8. Bake 15–17 minutes or until a toothpick comes out clean.

  9. Cool slightly and transfer to a wire rack.
