Chilli garlic fried rice is a spicy, aromatic dish bursting with bold flavors. This quick and satisfying meal is perfect for a speedy dinner or for repurposing leftover rice. The combination of garlic, chili, and soy sauce creates a rich, flavorful base that is complemented by fresh green onions and optional add-ins like vegetables, eggs, or protein for added texture and nutrition.

  • 3 cups cooked rice (cold works best)
  • 2 tablespoons oil
  • 1 tablespoon garlic, minced
  • 12 teaspoons chili paste or chili flakes
  • 2 tablespoons soy sauce
  • 1 teaspoon vinegar or lemon juice
  • 2 green onions, sliced

Optional Add-ins

  • Mixed vegetables (such as carrots, peas, bell peppers) – 1 cup, chopped
  • 1 egg (optional)
  • Cooked protein (chicken, shrimp, or tofu) – 1/2 cup, chopped


Instructions

  1. Heat the Oil: Heat 2 tablespoons of oil in a wok or large skillet over high heat until shimmering.
  2. Sauté Garlic and Chili: Add the minced garlic and 1–2 teaspoons of chili paste or chili flakes to the hot oil. Stir-fry briefly, about 30 seconds, until fragrant but not burnt.
  3. Add Rice: Add 3 cups of cold cooked rice to the wok. Stir-fry vigorously, breaking up any clumps so the rice is evenly heated and coated with the chili garlic oil.
  4. Season the Rice: Pour in 2 tablespoons of soy sauce and 1 teaspoon of vinegar or lemon juice. Toss the rice thoroughly to ensure it’s evenly flavored and slightly glossy.
  5. Add Green Onions and Optional Add-ins: Stir in sliced green onions along with any optional vegetables, protein, or egg. If adding an egg, push the rice to one side of the wok, scramble the egg on the other side, then mix everything together.
  6. Final Stir-fry: Continue cooking and stirring for 3 to 5 minutes until the rice is hot throughout and develops slight crispiness on the bottom, enhancing both the texture and flavor.
