Instructions
- Heat the oil: Heat olive oil in a pan over medium heat to prepare for sautéing the chickpeas and garlic, ensuring the pan is evenly coated.
- Cook chickpeas: Add the cooked chickpeas, minced garlic, paprika, salt, and black pepper to the pan. Cook for 5 to 7 minutes, stirring occasionally, until the chickpeas begin to get slightly crispy and fragrant.
- Create space: Push the chickpeas to one side of the pan to clear space for the eggs, without removing the chickpeas from the heat.
- Fry eggs: Crack the eggs into the cleared side of the pan and fry them to your desired doneness, either sunny side up, over easy, or as preferred.
- Garnish and serve: Once the eggs are cooked, sprinkle fresh parsley over the entire dish for a burst of color and flavor. Serve warm immediately for best taste.
