Description

A hearty Mexican sandwich filled with juicy grilled chicken breasts, fresh avocado, tomato, and crisp lettuce, all layered with creamy mayonnaise and savory refried beans inside a soft bolillo roll. This Chicken Torta Sandwich offers a satisfying, bold-flavored lunch that’s quick to prepare and easy to customize.

Ingredients

Protein

  • 2 chicken breasts (grilled or cooked)

Bread

  • 2 sandwich rolls (bolillo or similar)

Vegetables & Toppings

  • 1 avocado (sliced)
  • 1 tomato (sliced)
  • Lettuce leaves

Condiments & Seasonings

  • 2 tablespoons mayonnaise
  • 1 tablespoon refried beans
  • 1 tablespoon oil
  • Salt and pepper to taste

Instructions

  1. Season and cook chicken: Season the chicken breasts with salt and pepper. Heat 1 tablespoon of oil in a skillet or grill pan over medium-high heat. Cook the chicken breasts for about 6-7 minutes per side, or until fully cooked through and juices run clear. Remove from heat and slice into thin pieces.
  2. Prepare the sandwich rolls: Slice the bolillo rolls horizontally. If preferred, lightly toast them on the grill or in a toaster oven to add a slight crispness and warmth.
  3. Spread the condiments: On the cut sides of each roll, evenly spread 1 tablespoon of mayonnaise and 1/2 tablespoon of refried beans. This layer adds creaminess and a savory depth of flavor.
  4. Assemble the sandwich: Layer the sliced grilled chicken evenly on the bottom halves of the rolls. Follow with sliced avocado, tomato slices, and fresh lettuce leaves to add texture and freshness.
  5. Close and serve: Place the top halves of the rolls over the fillings and press gently to hold everything together. Serve the chicken torta sandwiches immediately while the chicken is warm for the best flavor experience.

Notes

  • Add jalapeños or pickled peppers inside the sandwich for extra heat and a spicy kick.
  • Opt to grill the chicken on an outdoor grill for authentic smoky flavor.
  • Substitute chicken with grilled beef or pork for a different protein variation.
