Ingredients
Marinade:
- 1 1/2 lbs boneless, skinless chicken thighs (or breasts)

Instructions
- Prepare Marinade: In a small bowl, mix together the olive oil, chili powder, cumin, garlic powder, paprika, onion powder, salt, pepper, lime juice, and minced garlic to make the marinade.
- Marinate Chicken: Place the chicken thighs (or breasts) in a resealable plastic bag or shallow dish, pour the marinade over the chicken, toss to coat, and refrigerate for at least 30 minutes or up to 2 hours.
- Grill Method: Preheat your grill to medium-high heat. Grill the chicken for 5-7 minutes per side until the internal temperature reaches 165°F (74°C). Let it rest before slicing.
- Skillet Method: Heat a large skillet over medium heat. Add a small amount of oil and cook the marinated chicken for 5-7 minutes per side, until golden brown and fully cooked. Let it rest before slicing.
- Warm Tortillas: While the chicken is cooking, warm the tortillas on the stove or microwave until soft and pliable.
- Assemble Tacos: Slice the rested chicken into thin strips or bite-sized pieces. Divide the chicken evenly between the tortillas and top each taco with chopped onions, cilantro, a squeeze of lime juice, and any optional toppings like salsa, avocado, or radishes.
- Serve: Serve immediately while the chicken is warm and enjoy with your favorite side dishes or drinks!
Notes
- For a spicy kick, add more chili powder or a chopped jalapeño to the marinade.
