Ingredients

Noodles

  • 1 pack shirataki noodles (drained & rinsed)

Protein

  • 1 chicken breast, sliced thin

Vegetables

  • 1 cup broccoli florets
  • ½ cup bell pepper strips
  • 1 clove garlic, minced

Sauce and Oils

  • 1 tbsp soy sauce (or tamari)
  • 1 tsp sesame oil
  • 1 tsp ginger paste


Instructions

  1. Prepare Noodles: Rinse the shirataki noodles thoroughly under cold water, then boil them for 2 minutes to remove their distinct odor. Drain well and pat dry to reduce excess moisture.
  2. Cook Chicken and Garlic: Heat sesame oil in a wok or large skillet over medium-high heat. Add minced garlic and sliced chicken breast. Stir-fry until the chicken is cooked through and slightly browned, about 4-5 minutes.
  3. Cook Vegetables: Add broccoli florets and bell pepper strips to the wok. Stir-fry the vegetables with the chicken for 2–3 minutes until tender-crisp.
  4. Add Noodles and Sauce: Add the shirataki noodles along with soy sauce and ginger paste. Stir-fry everything together for another 2 minutes until the noodles and vegetables are heated through and well coated in sauce.
  5. Serve: Remove from heat and serve hot. Optionally, sprinkle with sesame seeds for added texture and flavor.

  • Pat noodles dry before adding to reduce excess liquid and avoid soggy stir-fry.
  • Substitute shrimp or tofu for protein variety and to accommodate dietary preferences.
