Description

A cozy, comforting chicken soup loaded with tender potatoes, carrots, and celery in a flavorful chicken broth — perfect for warming up on chilly days.

Ingredients

Protein

  • 1 lb chicken breast, diced

Vegetables

  • 2 cups potatoes, chopped
  • 1 cup carrots, sliced
  • 1 cup celery, chopped

Liquids & Seasonings

  • 4 cups chicken broth
  • Salt & pepper to taste

Instructions

  1. Combine Ingredients: Add the diced chicken breast, chopped potatoes, sliced carrots, chopped celery, and chicken broth into a large pot. Season with salt and pepper to taste.
  2. Cook and Simmer: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer gently for 20–25 minutes until the vegetables are tender and the chicken is cooked through.
  3. Shred Chicken: Remove the chicken pieces from the soup and shred them using two forks if desired. Return the shredded chicken back to the pot and stir well.
  4. Serve: Ladle the soup into bowls and enjoy hot. Optionally, garnish with fresh herbs or a splash of cream for added richness.

Notes

  • Add rosemary or thyme to the pot while simmering for enhanced herbal flavor.
  • Stir in a splash of cream or half-and-half just before serving for a richer soup.
  • For a thicker consistency, mash some of the potatoes in the soup and stir.
  • Adjust salt and pepper according to your taste preference.
