- 1 lb chicken breast, diced
Vegetables
- 2 cups potatoes, chopped
- 1 cup carrots, sliced
- 1 cup celery, chopped
Liquids & Seasonings
- 4 cups chicken broth
- Salt & pepper to taste
Instructions
- Combine Ingredients: Add the diced chicken breast, chopped potatoes, sliced carrots, chopped celery, and chicken broth into a large pot. Season with salt and pepper to taste.
- Cook and Simmer: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer gently for 20–25 minutes until the vegetables are tender and the chicken is cooked through.
- Shred Chicken: Remove the chicken pieces from the soup and shred them using two forks if desired. Return the shredded chicken back to the pot and stir well.
- Serve: Ladle the soup into bowls and enjoy hot. Optionally, garnish with fresh herbs or a splash of cream for added richness.
Notes
- Add rosemary or thyme to the pot while simmering for enhanced herbal flavor.
- Stir in a splash of cream or half-and-half just before serving for a richer soup.
- For a thicker consistency, mash some of the potatoes in the soup and stir.
